Quick knit and a weekend salad

I love Saturdays. It makes me feel like knitting and planning. I have managed to start 3 new projects: a bulky bag, and 3 hats. Originally it was 2 hats but my friend visiting from Haiti was leaving soon and I wanted to give her a gift before her departure. I found this really easy hat on lion brand yarn and was able to make it under 4 hours. It came out so cute but unfortunately I didn’t take a picture of it (which happens to most of my finished creations anyways). You can find the pattern here but you might need to sign up to the Lion Brand Yarn website. My yarn store finally got a shipment of Cascade Yarns! I can’t wait to pick it up and finish my grad bag.

My boyfriend went to a football game and I am home alone very good time to experiment since he doesn’t even eat anything green.

A quick weekend arugula salad for 1

2 handful of arugula

1 handful of cherry tomatoes

Balsamic vinegar


1 small shallot

Olive oil

a pinch of salt


Croutons (optional but it adds a nice crunch)

Wash the tomatoes and arugula and put in a bowl. Cut the shallot into tiny pieces. In a smaller bowl put balsamic vinegar, olive oil, salt, honey and shallot. Whisk well with a fork until you get a nice blended consistency.

Pour into the salad and toss. Put in a plate and sprinkle the prosciutto and croutons on top. Miam, miam!

Note: I like having just a tad bit more olive oil than vinegar and a small amount of honey (about 1 teaspoon)

    delicious looking salad. Today I went to the store just to get balsamic vinegar and olive oil just to keep at my office desk for when i make salads here. Actually, I think I’ll make one now 🙂
